 Kale Orzo

KALE ORZO 

 

1 cup uncooked orzo (1 cup uncooked orzo = 2½ cups cooked orzo)
2 cups chopped kale
3 cups kale salsa (see kale salsa recipe )
Olive oil
Parmesan cheese
 
Wash kale thoroughly and remove large stems. Steam chopped kale for 7-9 minutes or until it turns a bright green.
 
Boil 1 cup orzo in 2 qts. salted water uncovered for about 8 minutes and drain. Return warm orzo to the pan, adding the cooked kale and kale salsa.
 
Drizzle olive oil over the ingredients and stir.  Serve with Parmesan cheese sprinkled on top.  
                                                                                          
Makes about 6 cups of Kale Orzo.
